When it's hot I like to use the crockpot, keeps the kitchen cool.
SALSA CREAM CHEESE CHICKEN w/BLACK BEANS thawed or frozen chicken breasts, 2 to 6 3/4 c. cream cheese small jar of salsa, or 1 to 2 c. fresh homemade 1 can black beans 1 can corn or mexicorn flour tortillas optional: 1 or 2 sm. cans chopped green chilis optional: hot sauce of your choice to taste --------------------------------------------------- This is really easy, and you can make lots of substitutions but basically: Place boneless skinless chicken breasts in your crock (frozen or not) Add: a jar of salsa, or make your own fresh a can of black beans, drained a can of corn or Mexicorn, drained if you like it spicy add: 1 or 2 small (4 oz.) cans of chopped green chilis or jalapenos hot sauce to taste I have a very small crockpot so I only put in 2 chicken breasts; depending on how much time I have, I put it on high for at least 2 hrs, or low for 4 or more. If I'm really in a hurry I will cut the chicken in big chunks. About 15 min. before serving, add about 3/4 c. cream cheese (I never measure any of this, so am just guessing). Stir it all up when you're ready, and serve with tortillas. The chicken will be tender enough to shred and you can eat it like chili in a bowl or wrapped like a burrito. YUM. |

I made this today. Put it on before I left for church and lunch was ready when we got home! It was delicious!

I'm definitely trying this one! I love crockpot cooking. There's nothing better than dinner cooking by itself while I'm at work.

I think if I had taken half of it out before adding the cream cheese on Sunday and refrigerated it, it would have worked better as leftovers adding the c/c just before serving. I"m sure I do somewhere... I'll look for them later. When I made this recipe on Sunday I think I put way too much salsa in it, so it was a bit runny. So I made some rice and mixed into the the salsa/beans/corn/cream cheese mixture after I'd taken the chicken out. It was really good.
