I got this recipe from a friend and tried it tonight... it was great! Mine turned out a little too soupy, so if you don't like it kind of thin try using a bigger potato.
The recipe calls for: 6 cups vegetable broth (you could probably use beef or chicken broth if your not vegetarian, but it tasted fine to me with this) 2 red bell peppers, diced 2 large onions, diced 8 cloves garlic, minced 3 medium carrots, diced 1 small russet potato, peeled and diced 2 tablespoons butter Heat up a large pan with the 2 tablespoons of butter, and saute the onions, peppers, and garlic for 3-5 minutes. Add in the carrots and potato, and saute for 5 more minutes. Then put them all in the vegetable broth and simmer for 30 minutes. After that, toss them into a blender (only a few cups at a time, unless you have a REALLY BIG blender!), and you're done! It went great with toast. ![]() |

Believe me, I normally hate cooked veggies as well. This tasted kind of like a blended veggie soup, only without the nasty mushy veggies.

It was rainy here yesterday, and I had soup out of a can for lunch and this soup for dinner... I definitely enjoyed this soup more.

If it only takes you a few minutes to cut up the veggies, yeah. I'm horrible at that, and a dull knife didn't help, so cutting all the veggies up took me about 20 minutes.
But if you have a sharp knife or one of those nifty things that dices veggies in a few minutes, it could take you as little as around 35 minutes, yeah. This also makes a LOT of soup, so it's well worth the little bit of time put into it. |
