Ricotta and Spinach Stuffed Pasta Shells
32 large pasta shells (280g), or 16 cannelloni shells 500g spinach (fresh or frozen) 250g low-fat ricotta cheese 500g low-fat cottage cheese 600ml tomato pasta sauce 1 cup (250ml) vegetable stock 1 tablespoon finely grated fresh parmesan cheese 1. Cook pasta in a large saucepan of boiling water, uncovered, for 3 minutes; drain. Cool slightly. Skip this step if using 'oven ready' cannelloni shells. 2. Preheat oven to moderate. Boil, steam or microwave spinach until just wilted; drain. Chop spinach finely; squeeze out excess liquid. 3. Combine spinach in a large bowl with ricotta & cottage cheeses; spoon spinach mixture into pasta shells. 4. Combine sauce and stock in oiled 2-litre (8 cup) ovenproof dish. Place pasta shells in dish; sprinkle with parmesan. Bake, covered, in moderate oven about 1 hour or until pasta is tender. Serves: 4 Per serving: 10g fat (5.3g unsaturated); 2278kJ (545 cal); 71.3g carb Tip: This recipe is best made just before serving

Also, you can stuff all sorts of other veggies in them. I finely chop shrooms and summer squashes and stuff them in. |
