This is the recipe for a cajun rub. It goes good with the Crawfish etoufee recipe I listed earlier. This is also good seasoning for the Cajun smoked turkey which I will give the recipe for later.
1/4 cup sweet paprika 1 tablespoon onion flakes 1 tablespoon garlic flakes 1 tablespoon dried oregeno 1 tablespoon black pepper 2 teaspoons white pepper 1 to 2 teaspoons Cayenne pepper 1 teaspoon bay leaf 3/4 cup coarse salt 1 tablespoon dried thyme leaves You need to grind and mix the spices. I typically use a mortar and pestle to grind all the leaves and flakes. This is a good mix, and is definitely good in crawfish etoufee and smoke cajun turkey. Although it can also be used to spice other things (kind of like season-all except it's has more of a kick). I typically like to spice up potatoes and corn with this mix of spices.

As a veggie, your crayfish and turkey recipes are out, but I like Cajun flavors in general and might try concocting this mix. Why coarse salt, though? |
