I think I sent this to you Meg. I thought I'd post it anyway since I'm making it for a picnic this weekend.
Shoe Peg Salad 1 can shoe peg corn 1 can French style green beans 1 can peas 1 c. chopped celery 1 onion, chopped fine 1 jar pimentos 1 green pepper, chopped 3/4 c. sugar (Splenda works great too for those avoiding sugar) 2/3 c. vinegar 1/2 c. oil 1 tsp. salt Dash of pepper Drain vegetables. Add the next 4 items with the vegtables in a large bowl; mix well. Bring to boil the sugar, vinegar, oil, salt and pepper. Boil about a minute. Cool. Pour over vegetables. Mix well. Cover and put in refrigerator overnight. Mix well before serving.
