you know for such a large mammal, (grizzly bear/elk/moose sized) they are very good at never being seen by the eccologists that work in the area. Never being hit by cars, never leaving a body behind.

No, but finding such a thing living in the forests in "civilized" areas near cities? Maybe out in the uncharted wilderness somewhere that hasn't been researched much, but that would not include anywhere in the U.S., which has been the site of many "sightings".

Because it wouldn't be a first time as you have just illustrated, not just apes either, if people think we have discovered all the Mammals Birds and Reptiles that exist in the world then they are naive.
