If the Earth lasts for another 10,000 years and the Mormon sect is still around at that point, could they still be called "Latter Day" Saints?

It's always the latter days. Besides, "Former Day Saints" doesn't have as nice a ring to it.

If they accept the most widely accepted scientific models for the age of the Earth, relatively speaking, 10,000 years kinda still is the "last days."

It's "latter day" because this is the last dispensation. Even if this dispensation lasts for 1 million years, it will still be the last one, and therefore these will always be the latter days (no matter how long they last).
