Default Buddhist prayer

Who is prayed to? Why is it done? I thought Buddhism was a non-theistic religion?

I'm equally confused as to the purpose of ceremonies in Buddhism.

Prayer isn't necessarily toward a deity. When I pray, I pray to purify karma and to dedicate whatever merit I accumulate to the benefit of others.

For me, I'm taking out the "middle man" when praying for the blessings and fortune of others.

For the more non-mystical schools of buddhism, I always thought of the prayer/chanting/meditation, etc. as mental exercise rather than communication with some divine or otherworldly force.

I don't think of Buddhist prayer as "prayer" in the Christian sense. It's a form of meditation, a way of awakening oneself, not a way of communicating with some supernatural being.
