Man's law and God's Law

The problem is that many of the laws found in the Hebrew Scriptures were for only the Israelites/Jews.

Some laws may be relevant to non-Jews, but the rest are not relevant.

Are non-Jewish people supposed to follow Jewish laws?

No. Non Jews have seven laws:

No idols
No blasphemy
Don't kill
Don't steal
Don't be sexually immoral (including but not limited to bestiality, incest, etc...)
Don't tear the limb from a living animal
establish courts to enforce the other laws.

They're listed in the Talmud, but you can derive them from Genesis 9.

There are some Jewish laws that involve non-Jews... for example, the prohibition against Jews marrying non-Jews means that non-Jews can't marry Jews...

But the law of the Torah is a law for the Jews.

I don't think the 1st two are relevant for non-Jews, especially for non-religious people.

Since the question makes no sense to begin with, Rick, there's not much more to say. Which laws weren't written by people to organize their affairs and define their social power structures or further other useful ends? (Hint: none of them) Even the "laws" of physics are constructs of human thought.

So there's no point in asking about a distinction between "man's law" and "God's law" if all laws are man-made. The loss of the constructed divide between the observer and the observed is the source of grace, which is beyond all "law" and judgment.
